We've been gluten free and yeast free for a few years now. In the beginning we couldn't find a bread that resembled "real" bread. Then we tried this mix. The first week we had it we went into bread overload - made french toast, toast and eggs, sandwiches, everything we'd been wanting for the last few years. It was wonderful. I fill mini baking dishes, sprinkle it with sesame seed and use it to make hamburger buns. We prefer it hot from the oven or toasted for sandwiches, Very simple, too, just add water (that's it) beat for 3 minutes in mixer and you have 2 loaves of bread 40 minutes later. Just spent the day driving around to our local health food stores for it but they were all out. Amazon's cheaper anyway and has free shipping on this item.

I like these as well as standard wheat pancakes. And because they're gluten-free, I can eat as many as I want. HINTS: Put a bit of REAL vanilla extract in the mix and serve with REAL maple syrup, like we have here in New Hampshire.

I mash up a banana with this, add some walnuts, olive oil and cinnamon and a dash of cloves to make muffins. As a diabetic, I can't deal with processed flour or even whole wheat flours. As this is 100% beans, it has nutritional profile of beans not flour, so I have no problems at all. I don't use any salt. If you wanted you could use salt, but you don't need to use any. I haven't used it for anything else yet.

I have used better dough relaxers than this. The only way to have this work at all is to use considerably more than recommended, and even then you need to let your dough rest for several minutes in order for it not to "fight back". I was looking for something less expensive than the dough relaxer sold elsewhere. I guess you get what you pay for !

Gluten-Free Flour Tortillas
MAKES 6-8 TORTILLAS
1 cup white rice flour
1/3 cup potato starch
1/3 cup tapioca flour
1/3 cup fava bean flour
2 tsps xanthan gum
1 tsp baking powder
1/2 tsp sugar
1 1/4 tsp salt
2 TBs vegetable or other shortening
3/4 to 1 cup warm water
Combine all of the dry ingredients, then cut in or work in the shortening using a pastry blender or two knives or your hand.
Add the warm water, starting with 3/4 cup and mix well.
Continue to add water until a soft, cohesive dough is formed.
Heat a comal, tapa or griddle to medium heat. Then, form a ball of dough into a flattened disk, cupping the outside edges a bit to form a round.
Using a bollilo or rolling pin, roll into a round disk about 1/8 inch thick and about 8 inches in diameter or to your preference.
Bake one at a time on a hot griddle until the surface bubbles. Turn only once, the first side should have brown flecks.
Bake until the second side has slightly browned - should brown in a very short time.
Keep warm in a tortilla keeper or wrapped in a cloth until served.
Note: Will freeze in a sealed plastic bag for up to three months.

Because the grains of teff are small, the bulk of the grain is the bran and germ. This makes teff nutrient dense as the bran and germ are the most nutritious parts of any grain. This grain has a very high calcium content, and contains high levels of phosphorous, iron, copper, aluminum, barium, and thiamin. It is considered to have an excellent amino acid composition, with lysine levels higher than wheat or barley. Teff is high in protein, carbohydrates, and fiber. It contains no gluten so it is appropriate for those with gluten intolerance.
It bakes like buckwheat, so it is best to mix it with other, lighter, gluten free flours. I highly recommend it.

I've tried a few gluten free cake mixes and most weren't that great. They were too dense, or they were only good for an hour or so while they were fresh, but this cake mix is wonderful. The cupcakes I made were tasty, light and fluffy, and they stayed good for days. This is just as good as any gluten-ized cake mix. My friends couldn't even tell the difference. I highly recommend it to anyone struggling to find a tasty GF cake.

Set bread maker to 'rapid'. Heat 1 cup milk, then add 3 egg whites and 1 egg. Add 1 1/4 teaspoons instant yeast, 3 tblspns maple syrup and 1/4 cup oil. Mix and put in breadmaker. Add 1 1/2 cups tapioca flour and 1 cup garbanzo flour. Sprinkle 1 teaspoon xantham gum over top then press 'start'. Use a spatula to scrape down sides and bottom of breadmix as it is mixing. Ensure mixture is moist enough to flatten out within 20 seconds (if it stays in a ball shape, it will turn out too dry).
This has made THE fluffiest, tastiest homemade bread I have tried (and I've tried LOTS!). Don't use potato flour. Sorghum flour makes it taste yucky. Rice flour takes away the fluffiness.

My first time trying this brand, and I really liked the texture, unlike some other mixes and gf baking mixes I have tried in the past. I served it as strawberry shortcake, and my husband told me it was great, he couldn't tell the difference (he's not gluten free, and has turned his nose up at some of the other baked goods I've tried).
