Airbake Ultra By T-Fal 14 x 12-Inch Insulated Medium Cookie Sheet

We make a lot of cookies. Consequently, the comments, about these cookie sheets, have been interesting. For the record, we do not own any stock in AirBake or any related company and just added 7 more AirBake insulated cookie sheets to our stash, although we didn't buy them here.
We've read the negative, as well as the positive, comments. Each is correct and each is wrong, to a different extent. Everyone seems to be missing the same points. A cookie sheet is a cooking vessel, just like any pot or pan.
You would not, for example, complain about a double boiler, because it wasn't good for making fried eggs; nor would you complain about a cast iron frying pan, because it wasn't good for making soup. The point is that different types of cooking vessels are made, for different purposes, just as different types of cookie sheets are made, for different types of cookies.
Let's see if we can examine at least some of the problems, then try to shed some light on some of the possible cause(s), maybe even suggest some solution(s).
Those who like crisp, firm cookies, such as ginger snaps, sugar cookies or short breads, should not be using insulated pans. For them, the best cookie sheet is the uninsulated one, since it crisps better.
Those who prefer chewy, gooey or cake-like cookies, such as chewy oatmeal, fruit-based or fruit-filled cookies or similar items, should be using the insulated cookie sheets. The insulated sheets create a cookie which is evenly browned, top and bottom, definitely best for thicker cookies.
Those who like a darker bottom, on their cookies or pastry, should be using cookie sheets with darker colors (insulated or non-insulated, non-stick coated or otherwise). Remember, the darker the pan, the darker will be the bottoms of the cookies or pastry, relative to the tops.
Those who like their cookies with lighter colored bottoms should be using cookie sheets with bright, shiny, light-colored surfaces, insulated or otherwise.
If your cookies are spreading too thinly, the fault is not the cookie sheet but the recipe. Cookies, which use only butter or oil, as the fat, will spread much faster, because oil starts as a liquid and butter melts at a much lower temperature, thereby giving up its water content, much sooner. Crisco or other vegetable shortening melt at a much higher temperature, thereby holding moisture longer. That, in turn, allows the cookies to rise, higher, moister and for a longer time.
So, if you like thin cookies, use butter or oil as your only fat. If you like thicker cookies, use only vegetable shortening. If you want something between the two, use a mix of vegetable shortening and butter/oil.
Those who say their cookies are burned and/or sticking, because they used butter, to lubricate the cookie sheets, are correct. The problem is the butter, not the cookie sheet. Cookies are baked at high temperatures, 400'F not being unusual. The milk solids, in the butter, burn, at much lower temperatures than that. If the milk solids burn, that will, also, cause the cookies to stick and burn. The solution is to grease the cookie sheets with a vegetable shortening (such as Crisco) or a neutral-flavored oil (even the spray oils work fine), such as canola, safflower or sunflower, which will not burn, at those temperatures. That applies, even if your only fat, in the cookies, is butter or oil. In fact, if you're making peanut butter cookies, try using peanut oil, as the lubricant, which will impart a more robust peanut taste to the finished cookies.
No matter what you else do or what recipe you use, you must lubricate these and all other cookie sheets, properly, to avoid sticking. We use the bright, shiny versions, without the so-called non-stick coatings. Scratching isn't a problem, because there's nothing to scratch. We've found that only "non-stick" cookie sheets, of anybody's brand, easily scratch.
Also, if you use insulated cookie sheets, do not allow the cookies to cool on the cookie sheet. The insulation holds the heat, causing the cookies to continue cooking, often over-cooking, if they're left on the sheet. Transfer them to a wire rack, as soon as possible. Then, cool the cookie sheets, before reusing them. Adding cold dough, to a hot cookie sheet, is not good for the cookies. You can quickly cool insulated cookie sheets, by running the back side under cold water or spraying the back side, with your kitchen sink spray attachment.

Farberware Insulated Pizza Pan and Cookie Sheet Baking Set Review

Farberware Insulated Pizza Pan and Cookie Sheet Baking Set

I finally found a great cookie sheet! The cookies slide right off the cookie sheet. You actually have to be careful not to tip them off the sheet. No sticking at all. Be sure to face the tip of the sheet towards the oven opening in order to get them out of the oven safely. The other amazing thing is the cleanup. Just a little soap and water. No scraping. It is necessary to bake a little longer than your recipe calls for, but there is no burning cookies on these sheets. My sister-in-law has Rema cookie sheets which I just love but hadn't been able to find. These are just as good. I tried several other brands (Wearever was one) and ended up returning them. They stuck terribly. I have the very large 20" ,Farberware 52152 Insulated Bakeware 15-1/2-by-20-Inch Jumbo Cookie Sheet The size is perfect. It fits the entire shelf of my oven. I also have the two-piece set with the smaller cookie sheet and pizza crisper. Farberware Insulated Bakeware Value Pack The pizza crisper does a really nice job on frozen pizzas. No soggy crust. I reheated part of a pizza on it, and some cheese baked on. It rinsed off with hot water and no scraping. Farberware has done a great job again!

I have been making a pudding desert that has a baked crust for years. When I was approached to make it for a bake sale at work I needed to figure out a way to make it happen. The Ramekins were perfect. The size was just right and the price too. Next time I will order in bulk to keep them on hand, that way the shiping is cheaper too and it won't bite into the profits.

Orange Polka Dot Cupcake Liners STD 50 count Review

Orange Polka Dot Cupcake Liners STD 50 count
Average Reviews:

(More customer reviews)
These cupcake liners are so cute!!! However, if baking anything other than white cupcake, don't bother. I used these for chocolate, red velvet and white cupcakes. After baking, only on the white cupcakes could you still see the design and color of the liners. I don't know what it is about the chocolate and red velvet cupcakes but when the liners came out of baking you could barely tell what color/design the liners were. They mostly looked like whatever color cupcake I had just baked. I used the lime green, orange, light blue and brown (all with white polka dots) and it was the same for all of them. I even tried to double line the cupcake pan, but that didn't work either because the liners wouldn't stay together after baking.
If you have a better solution, I would love to hear it! Otherwise I recommend these only on white cupcakes!

Nordic Ware Pro Cast Multi Mini Bundt Pan Review

Nordic Ware Pro Cast Multi Mini Bundt Pan
Average Reviews:

(More customer reviews)
After having the product in my wishlist for many months, I decided to splurge and complete my purchase. The pan arrived promptly, even with Super Saver Shipping, and boy was I impressed. How best to describe this item? Heavy-duty, built to last, with a superb attention to detail. I couldn't wait to use it and immediately made a batch of rum cakes (recipe was listed on the back of the packaging). After a lengthy greasing (there is alot of surface area, with nooks and crannies everywhere), the batter was even dispersed amongst the six mini-bundts. Fifteen minutes later, the baked product was proudly pulled from the oven. Absolutely nothing stuck to the pan; quick flip and they came out perfectly. This has been one of those kitchen purchases that I thoroughly recommend to all my family and friends. And with a 20 year warranty, I expect this give me a lifetime of baking bliss.

These boxes were great!!! I ordered them, but was not sure I was going to get my cupcakes to be stationary. Low and behold I noticed the there were inserts that could be placed in the box. My cupcakes were stationary and all night everyone complimented how beautifully packaged they were. This was worth every penny!

Wilton White Ruffle Standard Cups, 24 Count Review

I bought these for a celebration I'm hosting, and was looking forward to making vegan green tea cupcakes for them. When I got them, I was really dismayed to find that every single one had a purple "wilton" logo stamped on the bottom of the cupcake wrapper.
I'm not someone who likes to go around advertising corporations, and I especially don't like to pay for the privilege! If you are looking for an all white cupcake wrapper, don't buy this one!

Large Takoyaki Pan, 24 hole #TBT3 Review

Large Takoyaki Pan, 24 hole #TBT3
Average Reviews:

(More customer reviews)
I haven't tried cooking with it yet but I felt I should write a review anyway. It came rather fast. Mine didn't come with the oil brush(which is a shame since I really wanted one) but it did come with the pick. I'm assuming by the previous review that getting the oil brush or pick is a hit or miss kind of deal but I'm so far happy with my purchase.
I only left 4 stars because the order page said it would come with the pan, the pick, and the oil brush. I expected to get all three seeing as that is what I paid for but only got 2 out of the 3. In the end, it's not that big of a deal and not worth fighting about. :)
Also, is the cast iron pan seasoned? I'm not sure if I can just go right ahead and cook with it or season it. If you have purchased this, can you let me know?

Wilton Shamrock Pan Review

Wilton Shamrock Pan

This is a fun shaped pan and extremely easy to clean by hand. I do not put it in the dishwasher as it would darken. Keep in mind it is very lightweight aluminum but thus far seems to evenly distribute heat. When I ordered it I thought it was a 4 leaf, but the bottom protrusion is a stem. I think it is a decent price for an inexpensive novelty cake pan.

Red Foil Regular Size Baking Cups Review

Red Foil Regular Size Baking Cups

The quantity of liners advertised is 32, but I only received 17. I was making a race car cupcake design for a 2-year-old's birthday and had to run around town trying to find more red foil liners in time to finish the design before the birthday party. I paid $2.99, plus $4.99 in shipping fees, in order to get two fewer foil liners than I need for my design. So frustrating and disappointing!

Sunbeam FPSBDML920 Donut Maker, Yellow Review

Sunbeam FPSBDML920 Donut Maker, Yellow

We just bought this over the weekend and tried it out with a gluten-free recipe. We had given up "fresh" donuts to buy GF frozen ones, which are good, but nothing like hot and homemade. My 8-yr-old daughter was in heaven -- we made glazes from the recipes that came with the maker and also just sprinkled them with cinnamon sugar. The doughnuts are small, so she ate 5 of them -- for our family of 5 we made about 20 doughnuts. Very easy, quick and a fun morning treat!

Joie de Vivre 50162 Mini Fry Egg Pan with Nonstick Surface Review

Joie de Vivre 50162 Mini Fry Egg Pan with Nonstick Surface
Average Reviews:

(More customer reviews)
I would have never bought this pan if I had seen the reviews here, but I bought it on an impulse at a cookware outlet and I'm so glad I did! My pan doesn't have any of the problems (hot handle, peeling nonstick) that the other reviewers here have experienced. I suspect that since those earlier reviews the pan has been redesigned by the manufacturer.
Whatever the reason, I absolutely love it! It's the only pan I've ever found that is the perfect size (4") for english muffins and orowheat sandwich thins. Honestly, I'm a rather practical person, so I generally don't buy things with little characters on them, but this pan has ended up being the most-used pan in my kitchen. It's perfect for making scrambled egg sandwiches, so I use it several times a week.
If the handle starts heating up or the nonstick peels off, I'll update this review, but in over six months of weekly use, it's performed like a little champ! And, over time, the cartoon egg on the handle has grown on me, it seems kind of shocked or amazed... perhaps because it has to watch me cook an egg!
BTW-The secret to light, fluffy scrambled eggs is to use a low heat and stir constantly. It takes a little longer, but it is so worth it.
Enjoy!
Claire
